Let me share a few of my favorite simple, affordable recipes that transition beautifully from winter into early spring.


Lemon Garlic Roast Chicken with Carrots & Potatoes


There is nothing more comforting — or more elegant — than a beautifully roasted chicken.

And the best part? It’s one of the most budget-friendly meals you can make.

What You’ll Need:

  • 1 whole chicken (3–4 lbs)

  • 4 carrots, cut into chunks

  • 4 Yukon gold potatoes, halved

  • 1 lemon, halved

  • 1 head garlic, sliced crosswise

  • Olive oil

  • Salt & pepper

  • Fresh thyme (if you have it)


How to Make It:

Preheat your oven to 400°F.

Toss the carrots and potatoes in olive oil, salt, and pepper and spread them in a roasting pan. Place the chicken right on top — this allows the juices to flavor the vegetables naturally.

Stuff the cavity with lemon and garlic. Drizzle olive oil over the chicken and season generously.

Roast for about 60–75 minutes, until golden and the juices run clear.

Let it rest before carving — this is key.


Momma Tip:
Right before serving, squeeze fresh lemon over everything and sprinkle a pinch of flaky salt. It instantly elevates the entire dish.


Creamy Spinach & Mushroom Pasta

This is one of those “looks fancy, tastes indulgent, but costs very little” meals.

Perfect for a weeknight dinner — or a casual date night at home.


Ingredients:

  • 12 oz pasta (penne or fettuccine)

  • 8 oz mushrooms, sliced

  • 3 cups fresh spinach

  • 3 cloves garlic

  • 1 cup cream or half & half

  • ½ cup grated parmesan

  • Olive oil, salt, pepper


Cook your pasta until al dente.

Sauté mushrooms in olive oil until golden and slightly caramelized — don’t rush this part. That’s where the flavor develops.

Add garlic, then stir in cream and let it simmer gently. Toss in spinach until wilted. Combine with pasta and parmesan.

Finish with cracked black pepper and a drizzle of olive oil.

Winter Citrus & Arugula Salad


Citrus is at its peak right now — sweet, juicy, and affordable.

This salad brings brightness to heavier February meals and feels perfectly light for March gatherings.

You’ll Need:

  • 2 oranges (navel or blood orange)

  • 1 grapefruit

  • 4 cups arugula

  • Thinly sliced red onion

  • Toasted almonds

  • Olive oil + balsamic

  • Salt & pepper


Peel and slice the citrus into rounds.

Lightly dress arugula with olive oil, salt, and pepper. Arrange citrus slices intentionally — layering them makes the plate look restaurant-worthy.

Top with onions, almonds, and a drizzle of balsamic.

Presentation is everything. Even simple ingredients become elegant when plated thoughtfully.


French-Inspired Lentil Soup

There is something timeless about lentil soup.

It’s hearty, nourishing, and incredibly affordable — but when served with crusty bread and a drizzle of good olive oil, it feels like something you’d enjoy in a small countryside café.

Ingredients:

  • 1 cup green lentils

  • 1 carrot, diced

  • 1 celery stalk, diced

  • ½ onion, diced

  • 2 cloves garlic

  • 4 cups broth

  • 1 bay leaf

  • Olive oil, salt, pepper


Sauté onion, carrot, and celery until softened. Add garlic. Stir in lentils and broth. Simmer about 30 minutes.

Finish with olive oil and fresh cracked pepper.

Simple. Elegant. Soul-warming.


Berries with Honey & Yogurt

As strawberries begin appearing in March, keep dessert light and beautiful.


Layer:

  • Greek yogurt

  • Fresh berries

  • Honey

  • Toasted nuts or granola


Serve in clear glasses for an effortless, elegant finish.

No baking required. No stress involved.
