Filipino Salted Duck Egg & Heirloom Tomato Salad
Filipino Salted Duck Egg & Heirloom Tomato Salad is a classic side dish that’s especially perfect with grilled or fried foods. This is a summer favorite, especially for my daughters! The duck eggs are a Chinese delicacy, and their bright red yolks are so cool, the kids love them!
Sweet, heirloom tomatoes help make this salad so beautiful to look at with its intense colors of yellow, green, red and orange -- not your typical tomatoes and the best in the summertime. These tomatoes provide plenty of health benefits and the juice provides some great acidity for this dish. The rich duck egg yolk tossed with the tomatoes creates a creamy dressing with infused vinegar (Sinamak) and Knorr Liquid Seasoning brings out that boost of flavor to round out all the ingredients.
- 6 salted duck eggs, peeled and quartered
- 4 cups variety of heirloom tomatoes, cut in wedges
- ¼ cup thinly sliced red onions
- 2 bunches scallions, chopped, leafy greens only
- ¼ cup sinamak vinegar
- 2 teaspoons Knorr Liquid Seasoning
Gently toss all ingredients together. Taste for seasoning and refrigerate until ready to serve.
