That intro seems a little dramatic for this simple Roasted Agave Glazed Cauliflower & Carrots recipe, I know. And in reading the name of this recipe, you may be skeptical at my claim of it's simplicity.
But that is exactly what I believe in. I believe that Great Everyday Meals, can be done with simple ingredients and basic cooking techniques. Agave glazed, this and that, it sounds very fancy, maybe complicated, not for the typical home cook.
In fact, it's just a head of cauliflower, one large carrot, sliced thinly, some olive oil, salt & pepper and a drizzle of agave nectar. THAT'S IT! Simple dinner recipes CAN be delicious, it can be cheap, and YOU can do it, I swear!
- 1 head of Cauliflower – separated
- 1 large Carrot – thinly sliced on a diagonal
- 3 tablespoons Olive Oil
- 1 teaspoon of Kosher Salt
- Fresh Cracked Pepper
- 2 tablespoons Agave Nectar
Heat the oven to 450 degrees
In a mixing bowl, gently toss the cauliflower and carrots in with the olive oil, salt & pepper, and agave nectar.
Place the veggies on a large cookie sheet and roast for 30 minutes, uncovered.
Serve as a side or as the main dish in a salad, or with pasta.
