15 Minute Ramen Stir Fry
I love a Ramen noodles and I'm not talking about the .39 cent package. Go to your Asian store like HMart and buy frozen Ramen noodles for soups and stir fry's.
Stir fry's are great because you can take leftovers like rotisserie chicken, ground pork and even chopped ham like I did in this recipe, toss it with vegetables and turn into a completely new meal.
This one is a simple recipe I made using whatever ingredients was in the fridge for my daughter's school lunch.
- 1 package, frozen ramen noodles, thawed
- 2 tablespoons vegetable oil
- 1/2 large diced red onion
- 1/2 cup diced ham
- 1 cup chopped cauliflower
- 1 cup sliced cabbage
- 1/2 teaspoon kosher salt
- 1/2 fresh cracked black pepper
- 1 tablespoon dark soy sauce
- 2 teaspoons chili in oil
- 1 tablespoon chopped Thai basil
- Lemon juice
Heat a large skillet or wok in high heat with oil.
Add onions and stir until translucent about 1 minute. Then, add the ham and sauté for another minute.
Add cauliflower and toss with onions and ham for about 3-5 minutes. Add the sliced cabbage and toss together for 3-4 minutes.
Then add the ramen noodles and toss together with soy sauce, salt and pepper, chili flakes in oil until nicely coated and hot.
Garnish with Thai basil and top with lemon juice.
