You’re late. You needed to be out the door ten minutes ago. The kids keep taking off their shoes, and you’ve just found an apple core in your coat pocket. You know that if you don’t feed your brain something soon then you won’t make it to dinner…and it’s only 2:47 pm. You need vegan healthy snacks, pronto! The question is, what can you make that really is quick, easy, and - most importantly - plant-based?
