Valentine’s Day isn’t just for lovers! Why not celebrate the day of love with the whole family with a fun recipe like my Meatball Marinara Stuffed Baked Potatoes?? The kids will love this and I bet the hubs will too!
If you need some inspiration on what to prepare, try pairing Carando Italian Sausage with a premium Bertolli Riserva sauce – the Tuscan inspired sauces and authentic Italian flavors of the sausages will simmer nicely together, leaving you with a meal you won’t want to end.

- 2 large Russet potatoes
- Olive oil
- 1 jar Bertolli Riserva Marinara
- 8 pieces Carando Italian meatballs
- Grated Parmesan cheese
- Chopped parsley
Heat the oven to 400 degrees. Drizzle your whole baked potatoes with a little olive oil and cover each potato tightly with foil and place on a baking sheet. Bake in the oven for 1 hour.
After one hour, let potatoes cool uncovered.
Take a skillet and heat together 1/2 a jar of Bertolli Riserva Marinara with the Carando meatballs and simmer together for about 20-25 minutes.
Then, take each baked potato, slice in half and scoop out just a little of the potatoes out of the shell to create a well for the meatballs. Scoop two meatballs in each half of a potato and top with marinara sauce. Then, top with Parmesan cheese and place back in the oven for about 10 minutes until the cheese has melted.
Take out of the oven and garnish with chopped parsley before serving.
